Olive oil gelato
Ingredients for 4 people:
- 3/4 cup sugar
- 1/4 cup plus 2 tablespoons water
- 3/4 cup whole milk
- Large pinch of salt
- 4 egg yolks
- 1/4 cup plus 2 tablespoons olive oil
Preparation:
- Mix sugar, water, milk and salt in a medium saucepan and heat until it bubbles around the edges of the pan.
- Whisk the egg yolks in a separate bowl until frothy. While whisking, pour in the liquids in a thin stream, then pour the mixture back into the pan. Continue whisking the pudding over a low to medium heat until it forms a fluffy pudding sauce.
- Promptly pour the pudding into a bowl and place the bowl in an iced water bath. Stir until the mixture has cooled. Transfer to a bowl with a lid and refrigerate overnight.
- Stir in 1/4 cup olive oil in a thin, steady stream - the mixture should become thick and smooth. Taste the mixture and decide if you want to add the remaining 2 tablespoons of oil - the oil flavor will become more prominent as the ice cream mellows, so keep that in mind.
- Add the additions to the ice cream machine and run for another 2-3 minutes until everything is well mixed. Once mixed, the ice cream can be frozen and served later.
