CURRY WITH PRAWNS
Ingredients for 4 people:
- 400 g prawns (cleaned)
- rapeseed oil
- 1 clove of garlic
- 200 g snow peas
- 200 g cauliflower (washed and cut)
- 1 tsp curry powder
- 150 ml stock
- 250 ml coconut milk
- chili pepper
- salt
- pepper
- 1 lime
Preparation:
- Fry the prawns and garlic slices in a pan with a tablespoon of rapeseed oil. Remove from the heat.
- Heat a teaspoon of rapeseed oil in a small pan and add the prawn shells and heads.
- Use a wooden spoon or mortar to crush them a little and add water (150 ml).
- Cook over a low heat for 10 minutes.
- Pour the liquid into a bowl and set aside.
- Put the pan with the prawns and garlic back on the heat. Add the snow peas and cauliflower and sauté until the first roasted aromas appear.
- Add the curry spice and the stock from the prawn shells.
- Cook until half the liquid has evaporated (approx. 10 minutes).
- Add the coconut milk and the remaining spices as well as the lemon juice and zest.
- The prawn curry is best served with rice
